
CHICKPEA FLOUR PANCAKES
Gluten Free, Vegan, Clean, Easy and Protein-Packed
Makes 6 medium size pancakes
Ingredients:
-1 cup chickpea flour (I use Bob’s Red Mill, Giant carries it)
-1 cup water
-3-4 tablespoons olive oil (more for greasing pan)
-salt and pepper
*I often use turmeric and cumin. You can get creative with the seasoning or keep it simple.
Instructions:
In a medium size bowl whisk together all of the ingredients. Heat a pan (cast iron are my fave) over medium heat and add some olive oil to the pan. Drizzle in a ladle amount of batter and move the pan gently so the batter thins out. I put a lid on the pan with a crack or so open (this helps to cook both sides of the pancake). When bubbles have formed in the middle, flip the pancake. Cook a little on the second side. Buon appetito!
*Note: You don’t have to add a little oil to the pan for each pancake but it will make them crispier around the edges.
